  • Cucumber
  • 2 T rice-wine vinegar
  • Juice of 1 lemon
  • Olive oil
  • 1 T caster sugar

Cooking Instructions

Peel away the outer skin of a cucumber, then halve it lengthways and remove the seeds. Slice thinly and marinate in rice-wine vinegar, the juice of 1 lemon and a drizzle of olive oil. Mix with caster sugar and serve chilled.
