Pomegranate cocktail

This vodka-based pomegranate juice cocktail is beautifully balanced with lemon juice. Garnish with candy-striped beetroot, apple and celery for a party starter.
Ingredients

- 4 cups pomegranate juice
- 1 cup good-quality vodka
- 1 baby or candy-striped beetroot, peeled and thinly sliced into rounds
- 2 lemon, juiced
- 2 Granny Smith apples, thinly sliced into rounds
- Celery stalks, shaved lengthways using a vegetable peeler
- 175 g pomegranate rubies

1. Combine the pomegranate juice, vodka and lemon juice in a large jug, stirring to mix well.
2. Layer the beetroot, apples and celery in a separate jug. Pour over the pomegranate cocktail and add the pomegranate rubies.
3. Fill 6 glasses with crushed ice and pour in the cocktail along with some of the beetroot, apple and celery.
