“This salad dances in your mouth.” - Mpho Phalane


  • 6 large baby marrows, shaved into ribbons
  • mint, a handful
  • 100 g goat’s cheese or Danish feta, crumbled
  • For the dressing, whisk:
  • 3-4 T olive oil
  • ½ lemon, juiced
  • 1-2 t honey
  • sea salt and freshly ground black pepper, to taste
  • ½ t ground cumin

Cooking Instructions

Arrange the salad by layering each ingredient. Finish with the dressing.
