Cooking Instructions

Preheat the oven to 180°C. Quarter tomatoes, place in a baking dish with crushed red chilli and cloves crushed garlic. Season to taste. Roast for 25 to 30 minutes. Toss with slivers of red onion, a few capers, lots of torn basil, a dash of red-wine vinegar, olive oil and torn mozzarella or crumbled goat’s cheese.
