  • 1 medium watermelon
  • For the dressing, mix:
  • 4 T capers roughly chopped
  • 1 lemon, juiced
  • 10 anchovies, roughly chopped
  • 2 cloves garlic, finely crushed
  • 1 red onion, finely chopped
  • 4 T mint roughly chopped
  • 4 T Italian parsley roughly chopped
  • 1/4 cup red wine vinegar
  • ground pink peppercorns, to taste
  • ground black peppercorns, to taste
  • salt, to taste
  • 50 g pecorino grated
  • 1/4 cup extra virgin olive oil

Cooking Instructions

Cut the watermelon into thick slices, then cut out stars using a cookie cutter. Arrange on a large serving platter and drizzle with the dressing.
