- 1 T melted butter
- 500 g strawberries, hulled
- 60 g unsalted butter, at room temperature
- 175 g sugar
- 150 g cake flour
- ½ cup milk
- 2 t baking powder
- 1 t vanilla extract
- ½ cup warm water
- Whipped cream or vanilla ice cream, for serving
Preheat the oven to 180°C. Using a pastry brush,coat the bottom of a 13cm x 9cm ovenproof dish with the melted butter.
Spread the strawberries evenly in the bottom of the dish. Place the dish on a lined baking sheet and set aside.
Mix the butter, 110 g sugar, cake our, milk, baking powder and vanilla extract using a wooden spoon. Spoon the batter over the fruit and spread evenly. Mix the remaining sugar and warm water. Pour evenly over the top of the batter. This gives the cobbler a golden brown crust and makes the strawberries softer and sweeter.
Bake for 25–30 minutes, or until golden brown and bubbling. Serve as is, or with whipped cream or vanilla ice cream.
