Stuffed soft-baked “fallen” apple

Ingredients

  • 4 Pink Lady apples
  • 6 dates, stoned and roughly chopped
  • 6 T golden syrup
  • 3 T butter
  • Mascarpone or custard, for serving

Preheat the oven to 180°C.

Core the apples and make a horizontal incision around each apple. Place the apples on a baking tray, stuff the cavities with the dates and drizzle with the syrup.

Top each apple with a knob of butter. Bake for 45 minutes, or until sticky and oozing.

Serve immediately with big dollops of mascarpone or custard.

Cook's note: Known as “fallen” apples for their squishy appearance, this might just be the best way to enjoy a Pink Lady apple: stuffed with dates, baked with butter and syrup and served with a dollop of marscapone. Core blimey!
