Summer baby marrow lasagne

This light, summery lasagne is vegan, thanks to the addition of Woolworths Beyond™ mince and an ingenious tofu cream instead of béchamel.

Ingredients

Method
    For the lasagne sheets

  • 250 g “00” flour
  • a pinch of salt
  • ½ cup room-temperature water
  • 1 T olive oil
  • 1/8 t turmeric
  • For the sauce and filling

  • 250 g Woolworths Beyond™ mince
  • sea salt, to taste
  • freshly ground black pepper, to taste
  • 270 g Woolworths silken tofu
  • ¼ cup almond milk
  • 1 T crushed garlic
  • 2 T olive oil
  • 1½ cups Woolworths passata rustica sofritto (crushed tomatoes with vegetables)
  • 5 large baby marrow, thinly sliced lengthways
  • lemon zest, to garnish
  • Woolworths dairy-free hard cheese, finely grated, to garnish
  • parsley, finely chopped, to garnish
  • basil, finely chopped, to garnish
  • dill, finely chopped, to garnish

Method

Ingredients

1. To make the lasagne sheets, combine the flour and salt and make a well in the centre. Add the water, olive oil, turmeric, and mix until a rough dough forms. Knead for 8–10 minutes until smooth and elastic. Add turmeric. Cover and rest for 30 minutes.
2. Divide the dough into manageable pieces. Using a pasta machine, roll out each piece starting at the widest setting working down to a lasagne-sheet thickness. Cut the sheets to fit your baking dish and set aside.
3. Preheat the oven to 200°C.
4. Combine the Beyond mince with the parsley and season to taste.
5. Blend the tofu, almond milk, garlic and olive oil until smooth and creamy. Season to taste.
6. Spoon a little passata into a baking dish. Layer with the lasagne sheets, Beyond mince mixture, baby marrow, tofu cream and more passata. Repeat the layers, finishing with baby marrow and tofu cream.
7. Bake for 25–30 minutes, or until the pasta is tender and the Beyond mince is cooked through and bubbling.
8. Garnish with lemon zest, hard cheese, parsley, basil and dill. Serve immediately.
