The healthy cheesecake

  • 250 g muesli
  • 3 T honey
  • ½ cup cloudy apple juice
  • 5 x 200 g tubs fat-free smooth cottage cheese
  • 6 free-range eggs, beaten
  • 1 t vanilla extract
  • Zest of 2 limes
  • Pulp of 4 granadillas
  • Honey, for drizzling (optional)

Preheat the oven to 160°C.
Combine the first three ingredients and use to line 8 small cake moulds. Bake for 10 minutes, or until crisp.
Combine the cottage cheese, eggs and vanilla extract, then spoon into the moulds.
Bake for 20 minutes, or until almost set, and allow to cool.
Serve with lime zest, granadilla and a drizzle of honey (if using).
