Ingredients

  • 1 red onion, finely diced
  • 1 t, each Woolworths prepared ginger, chilli and garlic
  • olive oil, for frying
  • 250 g sweet potato, diced and steamed
  • 170 g can Woolworths light meat tuna chunks in brine, drained
  • 2 spring onions, sliced
  • 1 lemon, zested
  • 2 T capers
  • sea salt and freshly ground black pepper, to taste
  • 100 g flour
  • 2 free-range eggs, beaten
  • 4 T coriander, chopped
  • 80 g panko breadcrumbs
  • 1 cup canola oil, for frying
  • chilli-fried eggs with tuna and sweet potato bites
  • 1 T olive oil
  • 1 free-range egg
  • Woolworths chilli crisp, for drizzling
  • 1 baguette, sliced and toasted
  • crème fraîche, for serving
  • coriander, for serving
  • Tuna-and-sweet potato bites in pitas with tzatziki
  • 8 Woolworths mini pita breads
  • Woolworths tzatziki, for serving
  • fresh mint, for serving
  • Asian-inspired rice bowls
  • 250 g pouch Woolworths Heat and Eat coconut rice, heated according to package instructions 
  • 300 g pack Woolworths rainbow slaw
  • 110 g pack shelled Woolworths edamame beans
  • Woolworths crispy onion sprinkle, for serving
  • Woolworths poké sauce, for drizzling

Cooking Instructions

1. Fry the onion in olive oil until softened, then stir in the garlic, ginger and chilli and cook for 1 minute.

2. Mash the steamed potato with a fork and add the onion mixture and coriander. Add the tuna, spring onion, lemon zest, capers, salt and black pepper. Check the seasoning.

3. Shape into small bite-sized patties, roll in the flour, dip into the beaten egg and roll into the panko breadcrumbs.

4. Fry in the canola oil until golden brown and crunchy. Drain on kitchen paper and serve warm with a sprinkle of salt and a squeeze of lemon.

Breakfast: Chilli-fried eggs with tuna and sweet potato bites 

1. Place a small non-stick pan over a high heat add a little olive oil to your pan and fry your egg to your liking.

2. Add a dash of Woolworths chilli oil or chilli crisp for the last 10 seconds of cooking and serve with warm tuna bites with chilli fried eggs, toasted baguette and crème fraîche with a drizzle of the oil from the chilli crisp. Garnish with coriander.

Lunch: Tuna-and-sweet potato bites in pitas with tzatziki

1. Toast the mini pita bread, top with tzatziki and mint with tuna bites. Optionally, serve with sliced fresh chilli and pickled pink onions.

Dinner: Asian-inspired rice bowls 

1. Place the rice and slaw in a large bowl.

2. Add the edamame beans, sprinkle over the onions and drizzle with the poké sauce. Top with the tuna bites.
