Virgin pomegranate mojito

  • 2 x 125 g raspberries punnets
  • 30 mint leaves
  • 6 limes, cut into wedges
  • Crushed ice, for serving
  • 2 cups pomegranate juice, plus extra for refilling
  • 2 cups lemonade, plus extra for refilling
  • Pomegranate rubies, to garnish

Divide the raspberries, mint and lime wedges between 6 glasses. Crush using a wooden spoon or muddler.

Fill each glass with crushed ice, pomegranate juice and lemonade and garnish with pomegranate rubies. Serve immediately. Refill as desired.
