  • 1 x 10 cm thick slice watermelon
  • 150 g Woolworths exotic tomatoes, halved
  • 3 Woolworths white nectarines, quartered
  • 1 cup Woolworths baby leaves
  • 1 fennel bulb, shaved
  • 6 radishes, thinly sliced
  • 1 red chilli, chopped
  • 12 caperberries, halved
  • 1 x 30 g punnet Woolworths samphire, blanched
  • 2 lime, juiced
  • 1⁄2 cup Woolworths Pom Royal

Place the watermelon on a plate. Scatter over all the ingredients except the lime juice and Pom Royal. Chill until ready to serve, then drizzle over the lime juice and Pom Royal.
