- 500 g raspberries
- 1/2 cup lime juice
- 6 cups watermelon juice
- Lime wedges, to serve
- Mint leaves, to serve
In a jug, combine half the raspberries and the lime juice and muddle together.
Top up with watermelon juice. Serve with the remaining raspberries, lime wedges, mint leaves and plenty of crushed ice.
Cook’s notes: Watermelon juice can be made using a juicer. If unavailable, process chopped watermelon in a food processor until smooth, then pass through a sieve. For a summery cocktail, serve with chilled vodka.
