8 sensational strawberry sweet treats

So winter-grown strawberries are a thing. Just go with it. Hannah Lewry’s sweet ideas for warm strawberry cobbler, meringue pie with a pretzel crust, and jammy Italian doughnuts will add a happy splash of colour to any day.

1. Strawberry cobbler

Warm puddings are always a comfort. Add syrupy strawberries and cream into the mix and you have the perfect berry dessert to enjoy on a chilly day. Hannah makes one big cookie-like topping in this version, but you can make it however you like.

2. Neapolitan ice cream

Whether you're interested in making ice cream from scratch or not, Hannah has a version of this recipe for you. For team make-from-scratch, there are detailed instructions to help you nail this recipe. You can also use store-bought ice cream to make this. Buy chocolate and vanilla ice cream, and focus your attention on making a strawberry compote to swirl through the vanilla ice cream. Whichever way you decide to make it, it will still be impressive and delicious.

3. Strawberry blondies

These blondies work as a lunchbox treat – or as a treat any time! You can enjoy them as is but if you want to get a little fancy, serve them with Hannah's strawberry ripple cream. P.S. The strawberry ripple cream can also be used to top flapjacks, waffles or the cobbler above. In fact, you can serve it with any dessert that works well with whipped cream.

4. Zabaglione with strawberries

This classic Italian dessert is even better when you serve it with berries. Hannah soaks the strawberries in the caster sugar and a squeeze of lemon juice to make them even more delicious.

 5. Frozen strawberry lassi

You can have this one as a drink or dessert. Either way, you need just three ingredients to make it – hulled and halved strawberries, coconut milk frozen into cubes, and buttermilk. Hannah sometimes adds frozen bananas but says that the freshness of the strawberries with the tangy buttermilk and cooling coconut is great as it is, too.

6. Strawberry curd meringue pie

This is one of those desserts you'll want to serve when you want to impress. It has a salty, sweet base made with giant salted pretzels. The strawberry curd can be made two days in advance (if you want to break up the labour) and it's topped with a Swiss meringue. Swiss meringue holds its shape better than ordinary meringue and can also be made in advance.

7. Strawberry custard bomboloni doughnuts

This recipe is easier to make than it looks. The dough is really easy to work with; you can use it immediately after proving or chill it and bring to room temperature an hour before frying. It's served with a strawberry custard that is essentially a strawberry sauce swirled through store-bought Woolworths vanilla bean custard. You can fill the doughnuts with the custard or serve it on the side.

8. Stovetop spiced strawberry jam

If you've bought too many strawberries, this is a great way to use them up. This stovetop jam recipe is super-easy to make. Hannah adds cinnamon, cardamom, star anise and cloves into the mix for the spiced component.
