Biltong-stuffed potato croquettes

Sauté 3 cloves chopped garlic, 1 chopped red onion and 2 sprigs rosemary for 5 minutes.
Add 400 g chopped mixed mushrooms, 4 cubed free-range chicken breasts and 1 cup cream and season. Poach for 10–15 minutes.
Serve with 200 g wilted baby spinach.
