For the chilli con carne:
Cook the con carne according to the package instructions – just add olive oil, beef mince if you want, 375 ml of stock or water, and 1 tin of canned tomatoes. Serve with rice – or with a whole lot of other Mexican delights like nachos, corn salsa, and a zesty quacamole.
For the corn salsa:
Blanch and chargrill two mielies and cut the kernels from the cob. Drizzle the corn with a splash of olive oil, then mix with chopped fresh coriander, sliced salad onions, thinly sliced green chilli, salt and pepper, and the zest and juice of one lime.
Mash two ripe avos with lemon or lime juice to taste, a pinch of chilli flakes, salt and pepper and more fresh coriander if you like.
Serve the feast with baked nacho chips, pink pickled onions, and virgin (or proper!) citrus margaritas.
