Pickled fish rotis with apple and beetroot raitas

Ingredients

  • 4 Woolworths frozen Indian plain rotis
  • 2 x 500 g Woolworths pickledfish tubs (hake or yellowtail)
  • 15 g coriander
  • Microgreens, to garnish
  • For the apple-and-cucumber raita, mix:

  • 1 Mediterranean cucumber, thinly sliced
  • 2 Granny Smith apples, chopped
  • 1 lemon, juiced
  • 1 cup Greek yoghurt

Method

Prepare the rotis according to package instructions, then place on serving dishes.

Top with the pickled fish, apple-and-cucumber raita and beetroot raita.

Garnish with coriander and microgreens.
