1. Place all the ingredients in a saucepan. Cover and simmer over a low heat until soft and caramelised. Cool slightly, then blend until smooth and creamy.
2. Spoon into a sterilised jar and seal. The apple butter will keep in the fridge for up to a week. Freeze in Ziploc bags and keep for up to a year.
Cook's note: serve swirled into yoghurt or on scones, waffles, pancakes or banana bread. It also makes a great apple sauce to eat with roast pork.
