- 3 T salted butter, optional
- 8 slices Woolworths white sandwich bread thins
- 200 g prawns, cooked, peeled and deveined
- 1/2 cup tomato sauce
- 1/2 cup mayonnaise
- 1 head Woolworths Crunchita lettuce, shredded
- 2 avocados, cubed
- salt, to taste
- a squeeze fresh lemon juice
1. Melt the butter in a heavy-based saucepan until foamy, then toast the outside of each sandwich thin.
2. Mix the tomato sauce and mayonnaise, then toss the prawns through the sauce.
3. Build the sandwiches by starting with the prawn cocktail, topping with the lettuce and ending off with the avocado.
4. Season and serve immediately.
