Bacon-and-“broccomole” dip

  • 250 g broccoli, broken into florets
  • 2 avocados, mashed
  • 1 lime, juiced
  • 1⁄2 red onion, finely chopped
  • 1 green chilli, finely chopped
  • 3 T fresh coriander
  • 2 T cream cheese
  • 200 g Woolworths diced bacon, fried
  • 1 T olive oil

Cooking Instructions

Break the broccoli into small florets, discarding the hardier bits, and steam for 5–8 minutes, or until tender.

Mash the avocados. Stir through the lime juice, red onion, green chilli, fresh coriander and season.

Blend the broccoli with cream cheese and mix into the guacamole.

Fry the Woolworths diced bacon in olive oil until very crispy, then drain on kitchen paper.

Place the broccomole in a bowl and top with the bacon. Serve with Woolworths seed crackers and garnish with fresh coriander and sliced red onion.

Cook’s note: You could use Woolies’ readymade plain or zesty guacamole.
