  • 1/4 cup Olive oil
  • 50 grams Coconut flour, sifted
  • 1/4 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Crushed garlic
  • 1 teaspoon Dijon Mustard
  • 5 large Eggs
  • 50 grams Cheddar cheese, grated
  • 130 grams Feta cheese, cut into small cubes
  • 50 grams Jalapeno slices (optional)

Cooking Instructions

In a mixing bowl, mix the coconut flour, baking powder, salt, pepper, cheddar cheese, feta cheese and jalapeno slices together. In another bowl, beat the eggs together with the mustard and olive oil. Stir the egg mixture into the dry mixture. Let it stand for 15 minutes.

Preheat oven to 200 oC. Spoon mixture into greased muffin pan (greased foil cupcakes) and bake for 20 minutes or till test skewer comes out clean.

Serve warm with butter. It serves about 7, depending on your sizes.
