This chicken tikka salad features ricotta, apple and cashews and is dressed with tzatziki, olive oil and apple juice. It's the perfect braai salad, or a way to use up leftover braai meat.


  • 600 g Woolworths flame grilled chicken tikka kebabs
  • 1 cucumber, cut into ribbons
  • 2 Granny Smith apples, sliced thinly
  • Coriander, to serve
  • 1 Ayrshire ricotta cheese
  • 1 x 100 g packet salted cashew nuts
  • 1 tub tzatziki, to drizzle
  • Extra virgin olive oil, to drizzle
  • ¼ cup cloudy apple juice, to drizzle

Cooking Instructions

Remove the chicken from the kebab sticks. Arrange the ingredients on a plate and drizzle with the tzatziki, olive oil and apple juice.
