“I love the flavours of chocolate and coconut together, whether in lamingtons or these magical no-bake snowballs made with crushed cornflakes.” – Abigail Donnelly

Ingredients

  • 75 g cornflakes
  • 200 g desiccated coconut
  • 125 g butter, softened
  • 120 g icing sugar
  • ½ cup milk
  • 6 T cocoa

Cooking Instructions

1. Crush the cornflakes using a Nutribullet or food processor. Pour into a bowl with the remaining ingredients, reserving 50 g coconut.

2. Mix well, using your hands to combine. Roll the mixture into balls about 12 cm in diameter. Roll in the remaining coconut. Chill, covered, until ready to serve.
