- 4 Woolworths crumbed pork chops
- 4 anchovy fillets, mashed
- 1 clove garlic, finely grated
- 1 T Dijon mustard
- 1 T Woolworths LemonGold®, juiced
- ½ cup Woolworths Extremely Creamy mayonnaise
- 2 Romaine lettuce hearts, roughly chopped
- sea salt, to taste
- black pepper, freshly ground, to taste
- ½ cup Parmesan, finely grated
- juice of ½ lemon
Method
Ingredients
1. Bake the pork chops according to package instructions until crispy and cooked through. Set aside.
2. In a small bowl, combine the anchovies, garlic, mustard, lemon juice and mayonnaise. Stir until smooth and well combined. Adjust the seasoning if necessary.
3. In a large bowl, toss the lettuce with the dressing until well coated.
4. Top the chops with the Caesar salad and garnish with freshly grated Parmesan. Finish with a squeeze of lemon before serving.
