Curd and ginger cookies

Ingredients
- 1 cup self raising flour
- 6 tablespoons vegetable oil
- 1 large egg
- 1/2 cup lemon / other curd
- 1/2 cup white sugar
- 2 teaspoons ginger powder
Cooking Instructions
Note: I’ve made Kumquat curd, but you can use lemon curd.
Preheat oven to 170 oC. Spray baking sheet. Mix everything together … it will be a moist mixture. Drop teaspoon size mixture on sheet – NOT TOO CLOSE! THEY SPREAD! (I usually put 4 in a row on the short side of baking sheet). Bake for 12 minutes. Let cool.
