Pork loin chops with apple-and-potato bake

Ingredients

Method
  • 3 T butter
  • 300 g pork loin chops
  • 1 T olive oil
  • Sea salt and freshly ground black pepper, to taste
  • 2 garlic cloves, crushed
  • 2 T sage, chopped
  • For the apple-and-potato bake:
  • 500 g potatoes, peeled and thinly sliced
  • 300 g apples, peeled and thinly sliced
  • Sea salt and freshly ground black pepper, to taste
  • Butter, for dotting

To make the pork loin chops

Preheat the oven to 200°C. Heat 1 T butter and the oil in a pan and brown the chops. Transfer to a baking tray and season lightly. Mix the remaining butter with the garlic and sage and smear onto the chops. Bake for 5–10 minutes, or until cooked through and tender. Allow to rest for 5 minutes. Spoon over the pan juices and serve with the apple-and-potato bake.

To make the apple-and-potato bake

Grease a 20 cm round or rectangular baking pan with butter. Alternate layers of potato and apple, seasoning and dotting each layer with butter. Bake at 200°C for 1 hour, or until tender and golden.

Cook's note: Pork and apples always make a good match. This time bake sliced apples with potatoes for a fine side dish.
