Ingredients

  • 1 cup Quick Cook Samp
  • 1 onion, chopped
  • 2-3 eggs, hard boiled, sliced
  • salt & pepper to taste
  • 1-2 cups mayonnaise
  • 2 tablespoons fresh curly parsley, chopped finely
  • 2 cups cold tap water

Cooking Instructions

This is a recipe JUST LIKE your potato salad recipe - except you use cooked Samp - not potatoes.

Put 1 cup raw Samp in pot with 2 cups cold tap water. Let it come to a boil. Reduce the heat, put the lid on but leave an opening and simmer for about 20 minutes, till Samp is soft - NOT MUSHY.

When Samp is cooked, drain and let it chill in fridge. After 1 hour in fridge, mix the Samp with onion, eggs, mayonnaise (enough mayo, don't be stingy), parsley and season to taste.
