- 1 T butter
- 2 T flour
- ½ cup beer
- ½ cup mature Cheddar cheese, grated
- 2 t hot English mustard
- sea salt and freshly ground black pepper, to taste
- 1 x 6-pack Woolworths syrup waffles
- 6 slices smoked ham
- 50 g Swiss chard, wilted
Melt the butter in a saucepan over a medium heat. Add the flour and stir to form a roux. Cook for 1 minute. Slowly add the beer while whisking, then cook until the sauce has thickened. Add the grated cheese and mustard and whisk until melted. Season to taste.
Place the waffles on a baking tray and top with the ham, Swiss chard and cheese sauce. Grill until
