Ingredients

  • 1 French loaf, cut into 12 slices
  • olive oil, to drizzle
  • 200 g streaky bacon, chopped
  • 200 g baby spinach
  • 1 small onion, chopped
  • 1 T chopped chives
  • 1 T canola oil
  • 4 free-range eggs

Method

Ingredients

1. Preheat the oven to 180ºC.

2. Line each cup of a greased 6-cup muffin tray with 2 slices French bread, drizzle with olive oil and toast in the oven.

3. Fry the bacon and add the baby spinach. Stir until wilted and set aside.

4. Fry the onion and chives in the oil.

5. Mix with the bacon and spinach.

6. Beat 4 eggs and the fried ingredients and mix.

7. Spoon into the muffin tray and bake for 10 minutes.
