Serves 3

Difficulty Easy

Prep Time 15 minutes

Cooking Time 15 – 25 minutes

Ingredients

4 heads garlic
1 red chilli
1 lime, peeled
2 T olive oil
3 x 650 g kebabs
400 g mixed tomatoes

For the roasted peanut dressing, mix:

2 cloves garlic, grated
1 T ginger, grated
2 chillies, finely chopped
2 lemons, juiced
2 limes, juice
1/2 cup olive oil
100 g peanuts, roasted and roughly chopped
Sea salt, to taste

Method

Wrap the garlic heads, chilli and lime peel in foil and drizzle with olive oil. Place the parcel over hot coals and roast for 15 to 20 minutes, or until the garlic is soft and golden.

Grill the kebabs until done to your liking.

Scatter the tomatoes on a serving platter, drizzle with the peanut dressing and serve with the roast garlic and grilled kebabs.

*Cook's note: Woolworths has a range of pre-marinated kebabs, from lamb to BBQ beef, ostrich, pork, bacon and of course chicken. Choose whichever you like or use a selection of different meats.
