No-bake strawberry ricotta cheesecake

Serves 6 to 8

Prep Time 30 minutes plus 5 hours' overnight chilling time

Ingredients

2 x 80 g boxes raspberry jelly powder
200 g fresh raspberries
3 cups whipping cream
1 cups custard
300 g Bakers Boudoir biscuits
fresh berries, to garnish
100 ml coffee, cooled
fresh berries, to garnish
icing sugar, for dusting

Method

1. Prepare the jelly according to package instructions and pour into a trifle bowl. Refrigerate for 1 hour, then add the raspberries. Refrigerate for a further 4 hours or overnight. The jelly must be completely set.

2. Whip 1 cup cream until stiff peaks form, then fold the whipped cream into the custard.

3. Spoon half the custard-cream over the set jelly and top with Bakers Boudoir biscuits. Drizzle over half the coffee, then repeat the process.

4. Whip the remaining cream until stiff peaks form, then dollop over the Boudoir layer. Garnish with fresh berries and a dusting of icing sugar.

5. Serve and enjoy!
