Banana, Ginger, Coconut and Sesame Oil muffins

Ingredients
- 1 cup self-rising flour
- 1 large egg
- 1/2 cup milk
- 1/4 cup Sesame oil
- 1 cup coconut yoghurt
- 2 bananas, crushed with fork
- 1 teaspoon vanilla essence
- 1/2 cup white sugar
- 1 cup mixed seeds (Sesame/Pumpkin/Sunflower)
- 2 tablespoons fresh ginger, chopped small
Cooking Instructions
(Sunbeam convection oven temperature at bottom).
Preheat oven to 200 oC. Grease 12 muffin pan. In bowl, mix the egg, milk, oil, yoghurt, bananas, essence, sugar, ginger and seeds together. Stir in the flour and spoon into muffin pans. Bake for 20 minutes (or till test skewer comes out clean.)
Sunbeam convection oven – 220 oC – low tray – 6 muffins at a time – 25 minutes.
