Coconut yoghurt, apricot and mango muffins

Ingredients
- 1/4 cup Coconut Yoghurt
- 1/4 cup sunflower oil
- 1/4 cup Mango Peach (or other) jelly powder
- 3/4 cup self-raising flour
- 1 x-large / large egg
- 1/4 cup tinned apricots, drained, crushed
Cooking Instructions
Preheat oven to 190 oC. Prepare 6 muffin pan. Beat all ingredients together, spoon into muffin pan and bake for 20 minutes. Let cool in pan for 5 minutes.
