Tuna fish cakes

Fry 200 g diced pork rashers until crisp. Toss with 100 g baby spinach, 50 g cooked green beans, 200 g cooked baby potatoes and 1 x 170 g can drained tuna.
Dress with olive oil and lemon juice, season and top with 4 soft-boiled eggs.
