Tomato-and-tuscan chicken tray roast

Ingredients

  • 2 Woolworths Easy to Cook Tuscan herb chicken roasts
  • 2 x 700 g packets Woolworths peeled Nicola potatoes
  • 3 T olive oil
  • ½ head of garlic
  • 2 t oregano
  • Sea salt, and freshly ground pepper, to taste
  • 4 - 6 large tomatoes

Method

  1. Preheat the oven to 180°C.
  2. Roast chicken according to package instructions. Meanwhile, toss potatoes in olive oil. Arrange in a baking tray with garlic, oregano and season to taste.
  3. Roast for 30 minutes until browned. In the last 10 minutes of cooking the chickens, remove them from the bags and arrange in between the potatoes and roast for a further 10–15 minutes with large tomatoes. Serve in the tray.

Cook's note: Take it from the oven to the table and let everyone help themselves.
