Ingredients

4 T extra virgin olive oil
1 T smoked paprika
1 T garlic, crushed
1 T sesame seeds
1 t cumin seeds
salt and freshly ground black pepper, to taste
4 large brinjals, peeled and quartered

For the lemonade mayonnaise:

2⁄3 cup Woolworths vegan mayonnaise
1 lemon, zested and juiced
sea salt and freshly ground black pepper, to taste
1 T brown sugar
a few sprigs mint, plus extra for serving

For the gremolata, mix:

10 g Italian parsley, roughly chopped
1 lemon, zested
1 orange, zested
1 t salt flakes
10 g mint, roughly chopped

Method

1. Combine all the ingredients except the brinjals. Pour the spice mixture over the brinjals and air-fry at 200°C for 20 minutes.

2. To make the lemonade mayo, blend all the ingredients in a food processor. Spread onto a plate and top with the baked brinjal. Spoon over the gremolata, scatter over the mint leaves, drizzle with olive oil and serve immediately.
