1. Heat a large cast-iron pan over high heat until very hot. Place 4 patties in the hot pan, leaving space between each. Using a heavy spatula or burger press, firmly smash each patty flat. Season with salt and pepper. Cook the patties for 2–3 minutes until the edges are deeply caramelised and crisp. Flip each patty and immediately place a Cheddar cheese slice on top so it begins to melt. Stack a second patty on top of each cheese-topped patty, then cook for a further 2 minutes until the cheese is fully melted and the second patty is caramelised.
2. While the patties cook, place the buttered burger roll halves cut-side down in a separate pan until golden and toasted.
3. Mix together the mayonnaise and Dijon mustard and then spread a generous spoonful of the Dijon mayo on the cut side of each toasted roll half.
4. To assemble, place the lettuce on the bottom half of each roll, followed by the double-stacked patties. Scatter the pickled red onions and pickles over the top, add the top half of the roll, and serve immediately.
