Apple and Ginger Jam Muffins

Ingredients
- 1 cup self rising flour
- 1 large egg
- 385 grams tin pie apples, drained, chopped
- 1/4 cup white sugar
- 1/2 cup ginger preserve jam
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla essence
Cooking Instructions
(Sunbeam convection oven temperature at bottom).
Preheat oven to 200 oC. Grease 6 muffin pan. In bowl, mix the egg, milk, oil, essence, sugar, ginger preserve jam and chopped tinned apples together. Stir in the flour and spoon into muffin pans. Bake for 20 minutes (or till test skewer comes out clean.) Leave to cool for 5 minutes.
Sunbeam convection oven – 220 oC – low tray – 25 minutes.
