Ingredients

  • 1 cup self raising flour
  • 7 tablespoons vegetable oil
  • 4 teabags Apple, Cinnamon & Vanilla teabags
  • 1/2 cup white sugar
  • 1 large egg
  • 1 teaspoon mixed spices / allspices
  • 1/2 teaspoon ground cinnamon
  • desiccated coconut, to roll in
  • boiling water

Cooking Instructions

Preheat oven to 170oC. Spray baking sheet.

Tear open the 4 teabags, put in small dish and pour boiling water over – let steep for a few minutes. Drain the liquid and keep the leaves.

In bowl, mix the tea leaves, oil, sugar, egg, mixed spice, cinnamon and flour together. Will be a soft mixture. Form walnut-size balls, roll into the coconut and put on sheet. (Not too close – they do spread – I do 4 across the short side of baking sheet). Bake for 12 minutes.
