Ingredients

  • 2 cups all-purpose (cake) flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup white sugar
  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 cup peanut butter (smooth /crunchy)
  • 24 soft dried dates

Cooking Instructions

1. Preheat oven to 400 degrees F (205 degrees C).
2. In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl beat egg, milk, peanut butter and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy. 3. Pour the batter into the prepared pan, press 2 dates into each hole and bake at 400 degrees F (205 degrees C) for 25 minutes or until golden. Let cool in pan for 5 minutes. Carefully remove from pan, remove foil and let cool on wire rack / plate.
