Spinach and Potato
Ingredients
- 1/2 cup Onion - chopped
- 1 T Garlic clove - finely sliced
- 2 Dried chillie
- 1 tsp Cumin seeds (jeera)
- 3 T Vegetable oil
- 1 large Potato OR sweet potato sliced into 4mm discs
- 4 cups Spinach - shred finely
- 1 small Tomato - chopped
- Salt and pepper to taste
Cooking Instructions
Heat the oil, add the cumin seeds and dried chilies.
Once the oil is fragrant, add the onion and saute until transparent, add the garlic and fry for 30 seconds (careful not to burn the garlic). Add the sliced potatoes and stir, cover and let cook on medium heat for 5-7 minutes, stirring occasionally. When the potatoes are cooked through, add chopped spinach, chopped tomato, salt, and pepper, stir to combine and simmer for a further 5-7 minutes on low. Dish up and enjoy!
