Virgin Margarita-inspired cookies
Ingredients
- 7 tablespoons vegetable oil
- 1 cup self raising flour
- 1 large egg
- 2 tablespoons fresh lime zest
- 80 g Pick 'n Pay lemon jelly powder
- 3 teaspoons lemon essence
- 100 g Pick 'n Pay glazed chopped lemon peel
- white sugar (see note below)
- 1/2 cup white sugar for topping
- 1/2 teaspoon fine white salt for topping
Cooking Instructions
NOTE: In your measuring cup (for 1/2 cup), pour the 80g jelly powder … fill the rest of the 1/2 cup with white sugar.
Preheat oven to 170 oC. Prepare baking sheet.
In a flat bowl, mix the topping’s sugar & salt together and keep aside.
Mix in bowl the oil, egg, flour, zest, jelly powder-and-white sugar combo, lemon essence, pinch of salt and lemon peel. Roll balls, dip into the sugar-salt mixture, place on baking sheet (not too close – 4 across the short side – they do spread) and bake for 10 minutes. Let cool.
