5 quick tips for the best roast:
- Allow the meat to reach room temperature before cooking.
- Rub generously with oil and spice and brown in a pan.
- Use a timer! (Preparing other things or chatting to your guests can lead to forgetfulness. It’s okay. It happens to the best of us)
- Baste the meat halfway through the cooking process to keep it succulent. You can do this more than once if you like.
- Once cooked, allow the meat to rest. This allows the natural juices to redistribute for maximum succulence.
