Ingredients

For the dressing, mix:

1 T wholegrain mustard
¼ cup red wine vinegar
3 T Woolworths white balsamic condiment
½ lemon, zested and juiced
2 cloves garlic, crushed
3 T olive oil
400 g can Woolworths red speckled sugar beans
100 g Woolworths dried black-eyed beans, soaked
3 sticks celery, chopped
½ red onion, thinly sliced
handful fresh dill, chopped
white anchovies, for serving

Method

1. Toss the beans, celery, onion, dill and anchovies together, then add the dressing and serve.
