Creamy prawn cocktail with spiced lime wedges

Ingredients

  • 4 fresh gherkins
  • 2 x 200 g tubs ready-to-eat prawn cocktail
  • 1 lime, quartered
  • freshly ground black pepper, to taste
  • ground chilli flakes, for seasoning

Method

Cut the gherkins into thin slices, then again into thin strips.

Place in small bowls and top with the prawn-cocktail mixture (see below).

Serve with fresh wedges of lime, black pepper and a scattering of chilli flakes.

Cook's note: if you can't find prawn-cocktail mix at Woolworths, make your own by mixing 2 cups of shelled, deveined prawns with your favourite mayo, and a dash each of of tomato sauce and horseradish sauce.
