Raw artichoke slaw with wafu dressing

Ingredients

  • 2 artichokes 2, chokes removed
  • 1 lemon 1, cut into wedges
  • For the wafu dressing, mix:

  • ½ cup soya sauce
  • 1 x 5 cm ginger piece, finely grated
  • 1 red chilli, finely chopped

Method

Remove the tough outer leaves of the artichokes. Thinly slice the artichokes, removing the bitter, inedible choke using a teaspoon. Squeeze over the lemon juice, then toss with the dressing.
