Parsnip and gorgonzola soup

Ingredients

4 Woolworths white mini loaves
75 g Woolworths medium-fat butter with garlic and herbs
100 g provolone, sliced
100 g mozzarella, grated
100 g mature Cheddar, grated

Method

1.Preheat the oven to 180°C. Score the top of each mini loaf, cutting deep enough to fill but not all the way through. Generously spread the garlic-and-herb butter into each incision. Fill the incisions with the sliced provolone, then pack in the mozzarella and Cheddar.

2. Place on a baking tray and roast for 7 minutes, or until the bread is crisp and the cheese has melted. Serve immediately.

Cook’s note: For extra-golden cheese on top, switch to the grill for the final 2 minutes of cooking. Keep a close eye to prevent burning!
