Ingredients

200 g Woolworths Easy-Carve Medium Beech-Smoked Gammon, sliced*

For the Asian salad:

10 g mint
10 g basil
10 g coriander
1/2 cucumber, sliced into ribbons
70 g mange tout, blanched
30 g cashew nuts, toasted
2 T olive oil

For the dressing, whisk:

50 ml rice wine vinegar
175 ml sweet chilli sauce

Method

In a large mixing bowl, combine all the ingredients for the salad and toss.

Arrange the salad on a serving platter, top with gammon slices and drizzle with the dressing.
