Roasted red pepper dip

Ingredients

  • 5 cloves garlic
  • 340 g Woolworths roasted red peppers in brine, drained 
  • 1 T olive oil, plus extra for drizzling 
  • 35 g pine nuts, lightly toasted 
  • 1 t sugar 
  • 2 T Woolworths harissa paste 
  • 1 t salt 
  • 50 g Woolworths labneh 

Method

1.  Heat the oven to 200°C, peel the garlic cloves, drizzle with olive oil and roast for 10 minutes or until golden.

2. Place all the ingredients (only 20 g pine nuts) into a blender and blend until smooth.

3. Pour into a serving bowl and top with the remaining pine nuts and a drizzle of olive oil. Serve with your choice of crisps.
