Warm winter slaw

  • 4 cups winter vegetable mix (finely sliced baby cabbage, thin strips of fennel, kohlrabi and spring onion)
  • ½ cup olive oil
  • 1 apple, peeled and cut into thin strips
  • 3 T lemon juice
  • 1 t Dijon mustard
  • 1 garlic clove, crushed
  • Sea salt and freshly ground black pepper, to taste

Gently warm the vegetables in the heated oil until starting to wilt. Stir in the apple.

Mix the lemon juice with mustard and garlic, then pour over the vegetables. Mix well and season to taste.
